"Recently in one of your answers you mentioned proper calibration of a stove. When I'm cooking at home I feel like certain burners cook extremely hot, while others cook low. I may just not be used to electric burners, as I grew up with gas, but is there any way for a novice/amateur to know whether his or her stove is properly calibrated, both for the oven as well as the burners?
Also, what brands of cutlery are generally good/high quality brands? Also (especially if this site has rules against listing brand names), what denotes a good quality chef's or santoku knife?
Oh, and how much do your certifications play into your career? Were they worthwhile do you feel?
